Beetroot Soup
Fantastic hot or cold!
Method
- Bring water to the boil, add the ingredients and cook gently for 10 minutes.
- You can serve the soup hot, or alternatively chill well before serving for a refreshing summer starter.
Ingredients
- 600ml (1 pint) water
- 4 small cooked beetroot, skinned and grated
- 4 medium tomatoes, skinned and diced
- 4 tbsp chopped, spring onions
- 2 tbsp chopped parsley
- salt & pepper
