Beetroot Pudding

This pudding tastes equally good hot or cold.

Method

  1. Mix brown flour with baking powder.
  2. Rub in fat, add sugar and grated beetroot.
  3. Mix all the ingredients to a soft cake consistency with 3 or 4 tablespoons of milk.
  4. Turn the mixture into a greased pie dish and bake in a moderate oven for 35-40 minutes.

Ingredients

  • 175g (6oz) brown flour
  • ½ tsp baking powder
  • 10g (½oz) fat
  • 25g (1oz) sugar
  • 110g (4oz) cooked or raw
  • beetroot, finely grated
  • 3-4 tbsp milk
