Beetroot Fricassee

Serve with white fish dishes.

Method

  1. Heat margarine in saucepan. Add all the ingredients except the parsley.
  2. Mix thoroughly and heat for 5-10 minutes only. Add half the parsley, stir to blend.
  3. Top with the rest of the parsley.

Ingredients

  • salt & pepper
  • 2 tbsp water
  • 3 tbsp vinegar
  • 1 tsp flour
  • 1 medium onion, finely chopped
  • 25g (1oz) margarine
  • 450g (1lb) cooked beetroot, peeled & diced
  • 3 tbsp chopped parsley
