Beetroot & Orange Salad

A delicious refreshing salad

Method

  1. Cook beetroot, skin and slice.
  2. Grate rind from both the oranges. Mix the orange rind of one orange (saving the rind of the second) with the olive oil, orange juice, sugar and crushed garlic and mix well.
  3. Peel the second orange, remove pith from both oranges and thinly slice.
  4. Arrange beetroot slices and orange slices in alternate layers in a dish. Pour the dressing over the top. Scatter the rind of the second orange over the top.

Ingredients

  • 500g (1lb) cooked beetroot
  • 2 large oranges
  • 3 tbsp olive oil
  • 1 tbsp orange juice
  • 1 tsp sugar
  • 1 clove garlic, crushed
